Assignments & Grading

  • All assignments are to be completed on Moodle

  • No assignments will be accepted after 1 week has passed from the due date.

  • You will have an assignment every week, due Sunday at Midnight. I suggest to read the assignment before class that week. That way I can answer any questions or help guide you.

  • I do not offer extra credit on request. There are sometimes opportunities that arise to earn extra points and they will be offered to the entire class.

Quizzes

There is a short quiz every week, based off of the chapter topics we covered. Quizzes are all due on Sunday at Midnight.
There is no time limit. Please use your notes.

Practical Exams

There is are a Midterm & a Final practical exam in this course. You will be presented with recipes the day before the exam.  You will be expected to create the dishes and plate them according to the guidelines we have covered in class.

You will be graded on the following categories:

  • Professional Standards(sanitation, organization, preparation)

  • Execution(recipe success)

  • Taste

  • Plating
